  1. Prep ingredients. Chop onion and garlic. Wash and chop courgette, chop chorizo.
  2. Fry garlic and onion in oil for 2-3 mins. Add courgette and cook for another 2-3 mins. Add chopped chorizo, chilli and paprika. Start cooking rice in salted water.
  3. After 2-3 mins, add chopped tomatoes and simmer gently until rice is cooked.
