  2. You need 4 of small leeks.
  3. It's 2 of carrots.
  4. You need 1 stick of celery.
  5. Prepare 50 grams of red lentils.
  6. Prepare 2 of baby potatoes.
  7. You need 1 tsp of olive oil.
  8. It's 1 of chicken stock cube.

  1. Chop the vegetables up nice and small and sweat them in the oil on a low heat in a pan..
  2. Once nicely softened put in the chicken stock, red lentils, baby potatoes, star anise & add the stock cube or any additional seasoning you wish..
  3. Simmer for around 30 minutes until the red lentils have broken down and the soup looks a bit thickened..
  4. Towards the end add the peas and some shredded roast chicken and simmer for a few minutes longer..
  5. Serve with a bit of grated cheese & a slab of Soda Bread (see recipe).
